If you’ve been thinking about trying out Ubuntu for a server, right about now would be a great time. The Long Term Support (LTS) releases are supported for a longer duration and there’s training and consulting readily available to support your needs as an organization. A new version of Ubuntu is released every six months, but LTS versions are only released every other year.
Server, Desktop, Netbook, and Alternative ISO’s all in one page, here:

Some might say that Ubuntu and Server just don’t belong in the same sentence, but perhaps that’s just a myth, or how it used to be. If you’re accustomed to living inside the limited world of Windows, perhaps Ubuntu Server Edition would be your best bet for getting your feet wet with a real OS.

You can run it in memory as a live distribution to test it out, but you’ll be limited in resources and running from CD/DVD will be slow overall. Just skip any temptation to run it as a live image and go for the full installation.
The graphical installer will hold your hand.
Just hit the Forward button like a Windows pro (just think ‘next’) until you see the finish button and you’ll be off and running in no time…
